Bird’s Nest Cookies

Bird's Nest CookiesOne spring, I made Bird’s Nest Cookies with Megan and Paul.  It has since become a tradition.  As soon as Megan and Paul see robin’s egg candies at the store they start asking to make these.  This is one of those “don’t need a recipe” kind of cookies.  The most common recipe calls for chow mein noodles, melted chocolate and peanut butter.  If you want make them more healthy, use Fiber One or an alternate cereal – not that coating cereal in chocolate counts as healthy.  This time around I used chow mein noodles, melted chocolate chips and mini marshmallows.  I made them like I would make marshmallow treats.  I used robin’s egg candies but you can also substitute peanuts, jelly beans, or whatever your heart desires.  It is a good way to use up leftover Easter egg-shaped candy.

This is a great recipe for kids because once the mixture cools down a bit, the kids can help mold the nests.  Place molded nests on a cookie sheet lined with wax paper.  The most important thing to remember is to position the robin’s egg candies on the nest before the mixture cools (or the eggs will not stick to the nest).  Once the nests are made, stick the cookie sheet in the fridge to allow the nests to harden.  Share.  Eat.  Enjoy!

Great idea. My kids (and I) love those robin eggs. They are addictive! I especially love Paul’s huge smile in the background of the pic. Classic.
