Chocolate Covered Bananas
Yum. Chocolate Covered Bananas are easy to make and they are the perfect treat when the weather gets warm. Paul asked me to make some and since they are the (somewhat) healthy I obliged. The truth is that I can rarely say no to anything covered in chocolate. Can you blame me?
Start with ripe bananas. If you don’t have any at home you can buy the cheap “day old” bananas at grocery store. Prepare the bananas by cutting them in half crosswise. Insert a popsicle stick into the cut end. Wrap the prepared bananas in plastic wrap and freeze for at least one hour. I left mine in overnight.
When the bananas are ready it is time to melt the chocolate. I used semi-sweet chocolate chips that I zapped in the microwave. (I added about one tablespoon of shortening to help make the chocolate smooth.) Dip the bananas in the melted chocolate and use a spoon to help cover the entire area. If you want to add extra coatings (sprinkles, toasted coconut, nuts) have them ready and work fast. The chocolate will harden quickly since the banana is already frozen.
Paul and I pretty much ate these right away. Stick the bananas back into the freezer (wrapped in plastic wrap) if they need to harden more of if you are saving them to eat later. They should last up to five days in the freezer.

So last night, when I babysat…I really wanted one of these, but I didn’t want to share with the kids. So I waited until they fell asleep. I’m such a mean babysitter.

Okay, that just made me really hungry. YUM! I’ve never tried this.
