The Easiest Chocolate Cake Ever

This is my “go-to”, “no-fail” chocolate cake (or cupcake) recipe. It is one of those recipes that I always have the ingredients for in my pantry. Sometimes the simplest recipes are also the best.

6 Minute Chocolate Cake

  • 1-1/2 cup flour
  • 1/3 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup cold water (or brewed coffee)
  • 2 teaspoons vanilla
  • 2 tablespoons cider vinegar

Directions: Mix together ingredients beginning with flour and ending with cider vinegar (use mixing bowl or mix directly into pan). Bake at 375 degrees for approximately 25-30 minutes.

This recipe originally appeared in Mollie Katzen’s Moosewood Restaurant Cooks at Home: Fast and Easy Recipes for Any Day where the recipe is referred to as Vegan Chocolate Cake. The original recipe also includes an optional chocolate glaze recipe which I’ve never made but sounds delicious. Bonus: This cake is both egg-free and dairy-free. How many times have you been in the mood to bake cake only to realize that you were out of eggs? Problem solved.

P.S. I was going to post a picture of the cupcakes that the kids and I made two days ago. Sadly, they didn’t last that long.
